Matcha Crepe Cake

Ingredients:

  • 1 ½ cups milk
  • 4 eggs
  • 1 cup all-purpose flour
  • 2 tbsp matcha powder
  • 3 tbsp melted butter
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • 1/2 cup powdered sugar

Instructions:

  1. In a blender, combine milk, eggs, flour, 1 tbsp matcha, melted butter, sugar, and vanilla extract. Blend until smooth. Let the batter rest for 1 hour.
  2. Heat a non-stick skillet over medium heat. Pour a small amount of batter to form a thin crepe. Cook until the edges lift from the pan, flip, and cook for a few more seconds. Repeat with remaining batter.
  3. Whip the heavy cream with powdered sugar and the remaining matcha powder until stiff peaks form.
  4. Assemble the cake by layering crepes with a spread of matcha cream between each layer. Finish with cream on top and dust with matcha powder.
