Matcha Roll Cake

Ingredients:

  • 4 eggs, separated
  • ¾ cup sugar
  • ¾ cup all-purpose flour
  • 1 tbsp matcha powder
  • 1 cup whipped cream

Instructions:

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. Beat egg whites until stiff peaks form. Gradually add sugar, then add egg yolks one at a time.
  3. Sift flour and matcha powder together and fold into the egg mixture gently.
  4. Spread the batter evenly onto the prepared pan. Bake for 12-15 minutes.
  5. Roll the cake with the parchment while still warm. Let cool, then unroll and spread whipped cream. Roll up again and chill before serving.
